Wabgones epe Mnomen is such an easy recipe to make and it's flavorful and packed with nutrient rich carbohydrates, vitamins and minerals, protein (wild rice), and antioxidants. I also love this recipe because I have less dishes to clean afterwards.
Any squash can be used for this recipe, but I love to use Acorn squash because it absolutely makes its own serving dish. Instructional Video
Ingredients:
Wabgones (Acorn Squash -or any squash that you like or have on hand, though Acorn works best)
Mnomen (Wild Rice)
Zisbakwet (Pure maple syrup)
Sitagen (Salt)
Mzabek wikwengen (Foil)
Optional garnish; berries, maple sugar, wild sumac, dried greens.
Instructions:
Preheat oven to 350*F
Cut the tops off of the squash, just where you assume the cavity starts. Keep the top and gut the squash.
For a smaller squash add 1 Tbs Mnomen and 3 Tbs water into the cavity. For larger squash increase the wild rice keeping in mind a 1:3 rice/water ratio.
Add 1-3 Tbs of maple syrup, depending on size and preference, into the cavity and drizzle some around the lip of the squash to aid in securing the top. Place the top back on.
Wrap in foil, place on a baking sheet and bake for 1 hour or until squash is tender.
You can garnish with wild sumac, maple sugar, dried greens, and/or berries.
